HONEY

Honey is a valuable food source of the plant origin. The bees prepare it with gathering nectar or honey dew on plants, they add the secretion of their own glands then thicken everything together and after that they preserve it in the covered cells of the combs.

The honey contains approximately 40% of fruit sugar (fructose), 34% of grape sugar (glucose), 1-4% of other sugars, 17.7% of water and 5.3% of other ingredients such as vitamins (especially vitamin C), nitrogen compounds, minerals and attractants. These last few ingredients give specific properties to various kinds of floral and forest honey.

Honey is a type of food and medicine. It can be used without any culinary preparations and it has an extraordinary taste favoured by almost everyone. It can be eaten as an individual dish or in combination with different food as a drink or spread.

Honey can also be used for baking.

  • Every natural honey is hardened after a certain period of time. This phenomenon is called crystallization. For some kinds of honey this is a sign of good quality. This way the honey is naturally preserved for a longer period of time. This phenomenon has given us the old Slovenian name for honey and that is “strd”(to be solid).

FLOWER HONEY

Bees produce flower honey from the nectar or “medičina” and various meadow plants or fruit trees such as cherry tree, pear tree, plum tree, apple trees and others.

It is known that Slovenians flower honey structure varies because the bees gather it from different flowers, and that has an influence on the flavour and the colour of the honey.

The flower honey is convenient for babies, children and elders because it has a mild flavour and is easily digestible. It is recommended that patients with heart disease or lower blood pressure consume the flower honey.

The flower honey can be versatile usable. It can be used as a spread on bread, for baking, for meat dishes, salads and various drinks.

FOREST HONEY

We differentiate mixed forest honey and kinds of forest honey which came predominantly from one type of conifer, such as  spruce honey or silver fir honey. The mixed forest honey contains honeydew of the conifers and leaf trees called “mana” and the nectar of the hillside flowers.

Forest honey has a bright or dark brown colour, it is thicker and its flavour is more powerful than the flower honey flavour. It contains a lot of minerals therefore it is recommended for treating anaemia. It is specially recommended that anaemic pregnant women and mothers who are

CHESTNUT HONEY

The bees produce chestnut honey by gathering pollen and nectar from a chestnut tree. It has a reddish brown colour and a bit of bitter taste. The bitterness is an effect of the large amount of the chestnut pollen which it contains. Chestnut honey is a source of extremely rare substances that the human organism needs.

Among all kinds of honey chestnut honey contains the biggest amount of hydrogen peroxide therefore, it is very bactericidal. The pollen in chestnut honey has a pleasant effect on caducity, diverse nerve illnesses, anaemia, hypertension. It strengthens digestive organs and liver.

Because of its significant flavour the chestnut honey is indispensable in baking.

SILVER FIR HONEY

Silver fir honey is the most appreciated among the forest honeys. Bees can collect the honeydew from the silver fir tree only every few years, in average every fifth or sixth year and therefore is fir honey particularly valuable. Its colour is darker, with a greenish reflection, and usually opaque. Silver fir honey has very distinctive taste. It is recommended for anemia and respiratory problems.

LIME (LINDEN) HONEY

Lime honey can be produced from the nectar or honey dew.  Usually is has a bright yellow colour. It has a distinctive aroma and flavour which is similar to lime blossom with a hint of menthol. It is good for relaxing, cleansing the liver and regulating the blood pressure.

We recommend a lemon and lime honey drink for winter colds and in the summer for a quick rehydration.

ACACIA HONEY

Acacia honey is produced from the nectar of acacia trees.  It is very liquid, mild flavoured and has a soft yellow colour. It contains a lot of fruCTOSE and can be used as a sweetener for tea, coffee, cereals, salads and all kinds of drinks.

Acacia honey soothes and it has a beneficial effect on the heart muscle and the digestive tract.
